Profile:
Prior to joining Brasserie Bread, David was the CEO and co-founder of SandwichDirect.com an online food delivery company. Having raised the start-up capital to launch the company in Sydney in 2000 he relocated it to California. Over the next of 3 years he grew the company raising several rounds of venture capital and building a high profile board of directors. In 2003 David negotiated the merger of SandwichDirect.com with Specialty’s Café & Bakery a small retail chain based in San Francisco. David remains on the board of directors and the company has since grown to 30 stores in Seattle, San Francisco, LA and Chicago and it continues to expand.
Prior to this David was the founder of a telecommunications VAR subsequently sold to Telecom Australia, a software development company, and a marketing & distribution company servicing international IT vendors entering the Asia Pacific market.
Brasserie Bread
Brasserie Bread is the realization of a dream that started decades ago at Bayswater Brasserie in Kings Cross, the iconic Sydney restaurant where Michael Klausen and Tony Papas first started baking sourdough bread for its guests in 1996. Since 2000 Brasserie Bread has established a reputation for supplying premium artisan products to top food industry professionals and now supplies over 300 top restaurants, hotels, cafés and deli's across Sydney and the ACT.
Everybody at Brasserie Bread is passionate about the quest to bake true artisan products, and expert training, skill and a love of great ingredients have come together to create Australia’s leading sourdough bakery. Brasserie Bread’s mission is to “honour the traditions of artisan baking”, to this end it has developed and implemented sophisticated IT systems and logistics so it can deliver its products accurately and on time every day, 365 days a year. In another demonstration of its commitment to quality and customer satisfaction Brasserie Bread became HACCP accredited in 2007.
Brasserie Bread is located at 1737 Botany Road, Banksmeadow in an old saw-tooth warehouse a stone’s throw from the cranes of Port Botany. This is home to the wholesale baking business, the retail shop and the hugely popular Café. In September 2008 a dedicated Baking School was opened providing artisan baking classes for kids & schools, and a range of artisan baking workshops for adults. Brasserie Bread has become a unique destination for chefs, foodies, kids and all lovers of great food!
